位於法國西南角的波爾多產區，受到北大西洋暖流的調節，氣候溫和潮濕，所產出的佳釀有著均衡的酒體與細緻的質地。經典的混調方式與濃郁的口感，造就獨特的「波爾多風格」，儼然成為全世界許多酒莊的效仿對象。1855 年為了在巴黎世界博覽會上展現波爾多佳釀，拿破崙三世要求一份波爾多酒莊名單，最終將品質優異且穩定的酒莊分成五個級別，除了Mouton-Rothschild 於1973 年時從二級酒莊升為一級酒莊之外，至今沒有其他變動。而Sauternes 和Barsac 地區的白酒亦被分為兩級，其中Château d'Yquem 以超群的品質，例外成為所有級別之上的Premier Cru Supérieur 等級。波爾多酒莊在此分級制度下，經過了百餘年，至今在全世界葡萄酒中仍佔有舉足輕重的地位。而其穩定的品質與所具備的陳年實力，更是藏家們的收藏準則。
